Starter 8 tartlets 2/5 1 hour 25 minutes

For the pastry: 150 g flour •  65 g soft butter
For the filling: 600 g mimolette cheese • 20 cl heavy cream •  2 egg yolks


  • For the pastry, pour the flour and a pinch of salt into a bowl and mix.
  • Add the diced butter and knead.
  • Add some water if needed to form a ball.
  • Roll out the pastry to 2-3mm thickness.
  • Cut out 8 circles in the pastry and place them in buttered tartlet pans.
  • Prick the pastry with a fork. Set aside.
  • Cut the mimolette into thin slices and place them on the pastry in the pans. Set aside.
  • Beat the eggs with the cream and season with salt and pepper.
  • Pour the mixture over the mimolette.
  • Bake for 25 minutes at 200 °C.
